Toujours_Village is a group of the buildings where all kinds of bread are sold and even has each production facilities, so bread can be sold immediately after production. Following the first extension (2nd - 5th bldg.) after the first building (1st bldg.) completed, the village was expanded to its present appearance on the additionally secured land through the way of constructing an additional single building (6th - 10th bldg.) rather than a vertical extension. Each time a new bread building was completed, the new building was connected with an appropriate exterior space, and some forms of the previously built buildings were occasionally changed. Reestablishing the correlation between buildings was a new experience for us as well.

An interlinked complex that reveals its presence and is naturally absorbed in this bleak, unusually shaped land, which was a low hill by the railroad, was created. In order to allow customers to conveniently move between the bread buildings as well as enjoy themselves and have plenty of attractions to see, footpaths and natural elements were jointly arranged throughout the architecture.

Each of the 10 buildings had a different scale depending on their use and had to be shaped to fit their function. At the same time, a naturally extended village that gives a sense of unity across the entire complex was planned. When it was first planned, the Bread Stone Kiln building was intended to show the modest and vivid true nature of Toujours bakery just as it is. Old and familiar materials of used bricks and exposed concrete were used for exterior walls, part of the interior walls and even the exterior floors.

The circulation of the workers was connected by designing a sunken between buildings and joining underground passages. It is also the result of separating the lines from the visitors. The parking lot was placed on non-infringing the buildings in Toujours village, and the way, where customers walk, after parking is leaded to the main walkway in the village.

The characteristics of the building appear to be stone kilns built by protruding from the outer wall of the building and stacking old field stones. For the firewood kiln, due to its nature of directly using the fire, the building that is separate from the main building was constructed. The Firewood Kiln building is a place to make bread by baking with firewood, and connected to an open cafe for making chocolate and pizza. The bricks and exposed concrete were used as main finishing materials, as well as wood for the outdoor terrace space. A stand-type terrace was installed to look at the grass square and to eat a bread.

A glass greenhouse(10th B) is a place to grow the herbs and edible flowers. The roof was planned to be used as a prospect and resting space like a rooftop space. The Experience building(8th B) and Red Bean building(6th B) are places that allow the process of making bread to be experienced and the boiling of red beans, a main ingredient of bread, to be directly viewed, and they were designed with the motif of the Hobbit Village in the Lord of the Rings. Using the level difference of the land, top lights were installed as they were designed as buildings buried in the ground and underground buildings with grass planted on the roof. Alongside this, a traditional flour mill, small quantity steamed bread mill, and a support building with a dining and resting area for the convenience of workers, is situated, each with its own characterful appearance. Along the walk that connects the buildings, users can look around, experience, enjoy and rest in the various spaces. Even in this commercial space, we hope that this becomes a village where people can rest, experience and enjoy various cultural activities and nature, rather than merely consuming.

뚜쥬루과자점 빵돌가마마을(6 - 10동 증축)

빵돌가마마을은 빵의 종류에 따라 판매하는 장소에서 모든 생산시설을 갖추고 직접 생산하는 방식의 빵건물들이 모여있는 곳이다. 첫 건물(1동)이 세워진 뒤, 1차 증축(2-5동)에 이어서 추가 확보된 대지에 현재의 모습으로 확장됐는데, 수직 증축이 아닌 별도로 빵건물(6-10동)을 세우는 방법으로 증축됐다. 새로운 빵건물이 완성될 때마다 옥외공간을 통해 새 건물들을 연결했으며, 먼저 지어진 건물의 일부 형태는 변경되기도 했다. 건물 간 상호관계를 재정립하는 것은 건축가에게 새로운 경험이기도 했다.

기찻길 옆에 자리한 땅은 낮은 언덕이었으며 다소 황량하기도 했다. 이곳에 세워진 빵건물들은 언덕같은 지형속에 자연스럽게 묻히기도 하고, 존재감을 드러내기도 하면서 서로 연결되고 있다. 고객들은 빵건물을 연결하는 저마다의 보행 동선을 통해 건물들을 이용하면서, 곳곳에 마련된 자연스러운 옥외 공간에서 즐거움과 볼거리를 제공받는다.

10개 동의 건물은 각각 용도에 따라 규모가 달랐으며, 기능에 맞는 형태도 있어야 했다. 동시에 단지 전체에 통일감을 주며 자연스럽게 확장된 마을이어야 했다. 빵돌가마동을 처음 계획할 때 화려하게 포장하지 않고, 선한 뚜쥬루빵집의 본 모습을 그대로 보여주고자 하는 개념에서 출발했다. 파벽돌과 노출콘크리트라는 오래되고 친숙한 재료 본연의 모습을 드러내는 마감재로 외벽 및 내벽 일부뿐만 아니라 외부 바닥 등에도 사용했다.

빵돌가마마을 작업자들의 동선은 건물 사이에 선큰과 지하통로로 조성되어 있으며, 방문객들과의 동선을 분리하기 위한 결과이기도 하다. 주차장은 빵건물들과 거리를 유지하여 공간 간 영역을 침범하지 않는 선에서 배치했으며, 주차 후 이동하는 방문객 동선을 빵돌가마을의 주 보행로로 이어지도록 고려했다.

건물의 특성은 건물 외벽에 돌출하여 설치하고 오래된 밭돌을 쌓아 돌가마의 모습으로 드러난다. 장작가마동(7동)은 불을 직접 다루는 특성상 주 건물과 분리시키고 별도의 건물로 계획했다. 장작가마동은 장작가마빵 외에 초콜릿과 피자를 만드는 별도의 공간을 마련하여, 열린 카페로 연결된다. 파벽돌과 노출 콘크리트가 마감재로 사용됐으며, 옥외 테라스에는 목재가 사용되어 통일되고 친숙한 공간을 만들었다. 또한, 스탠드식 테라스를 이용하여 잔디광장을 바라보며 빵을 먹을 수 있는 공간을 마련했다.

잔디광장 끝에 위치한 유리 온실(10동)은 허브와 식용꽃을 키우는 곳인데, 루프탑 공간처럼 전망과 휴게공간으로 활용된다. 체험장(8동)과 팥 삶는 공간이 있는 건물(6동)은 빵 만드는 과정을 직접 보고, 체험할 수 있는 곳으로 반지의 제왕에 나오는 호빗마을(호비튼)을 모티브로 설계했다. 대지의 레벨차를 이용하여 땅 속에 묻힌 형태이며, 지붕 위에는 잔디를 식재한 지중건물로 톱라이트를 설치했다. 이외에도 전통적인 밀가루 제분소와 소량의 쪄서 만드는 빵제작소, 작업자들의 편의를 위한 식당과 휴식공간이 들어간 지원동 등이 각자의 개성있는 모습으로 자리 잡고 있다. 건물을 이어주는 산책로를 따라 이용자들은 다양한 공간을 둘러보고, 체험하며 즐기고 휴식할 수도 있다. 상업적인 공간에서도 단순히 소비만 하는 것이 아닌, 체험하고 다양한 문화활동과 자연을 즐기며 쉴 수 있는 마을과 같은 단지가 되고자 한다.
